A small, family-run bodega in the coastal town of Sancluar de Barrameda since 1751, this Manzanilla comes from some of the region's best vineyards (and Sherry has some of the greatest vineyards on Earth, almost entirely pure mineral chalk) and is aged for 4-5 years under velo de flor. Velo de flor? The unique thing about this type of Sherry (and Fino, also), is that after the wine is made (essentially, a very light and dry, lemony and mineral white wine) it is placed into very, very old barrels and not filled up all the way, allowing wild yeasts to settle on the surface of the wine and create a thick layer, known as the veil, or veto, of flor (think microflora). The yeasts protect the wine from oxygen, devour any remaining residual sugars, and give the wine a savory, briny, bread-dough character. The result is one of the world's wildest and most misunderstood, but also greatest white wines. Pair with anything salty. For fans of white Burgundy, Champagne, and sourdough bread baking. -- James
