Fermented at low temperatures in concrete vats, followed by a 60-day maceration utilizing a submerged cap
For a year, the Canaiolo Nero (i.e. La Merla) is aged in 20hL Austrian oak casks from Slovenia, while the Massaretta is aged in barriques. Oak aging is followed by 6 months in cement, totaling 18 months of elevage before bottling.
