Grappa is a pomace brandy -- produced from the lightly pressed or steamed skins, pulp, and seeds left over from winemaking. It is commonly released as a clear, unaged spirit, although some unique grappas are aged in barrels. It is traditionally served as a digestif or alongside espresso.
