Pisco is a grape brandy widely produced in South America although only two countries are legally allowed to call their products "pisco" [Chile and Peru]. Although both Peru and Chile require their Piscos to be dtistilled in a pot still, almost everything else is different: the types of grapes used in production, whether or not it is allowed to be diluted with water or aged in oak cask, how they are classified, etc. Even the recipe for a Pisco Sour varies depending on what country you are in.
