From Catalonia comes perhaps the ultimate gin for the Spanish gin tonic, this is distilled from the pomace of Priorat wine (specifically, garnacha and carignan) and organic, local botanicals and citrus -- rosemary, thyme, juniper, wild fennel, pine shoots, orange, lemon and fig. This is *not* a martini gin! Put a little splash of red wine (Priorat, Montsant. or just plain garnacha!) in a big balloon glass, fill up with BCN, tonic, lemon, lime, a few grapes or berries, and a sprig of rosemary, thyme, or even a sage leaf. -- James
