Absinthe is an anise flavored spirit with a loose definition and a colorful past. Aside form anise, its flavor is additional derived from the flowers and leaves of grand wormwood [artemesia absinthium], sweet fennel, and culinary/medicinal herbs. The spirit may be clear or a natural green color and is traditionally mixed with water to "release the green fairy".
